Coconut Macadamia Nut Cheesecake

Ingredients

  • 3 tablespoons DaVinci Gourmet Macadamia Nut Classic Syrup
  • 1/2 cup DaVinci Gourmet Coconut Classic Syrup
  • 1 1/2 tablespoons cornstarch
  • 1/4 cup unsalted macadamia nuts, chopped
  • 1 cup unsalted macadamia nuts, toasted and chopped
  • 1/3 cup graham cracker crumbs
  • 1/3 cup coconut, toasted
  • 2 tablespoons plus 2 teaspoons granulated sugar
  • 3 tablespoons butter, melted
  • 3 - 8 oz packages of cream cheese
  • 1 cup plus two tablespoons granulated sugar
  • 3 eggs
  • 1/2 tablespoon vanilla extract
  • 1 1/2 tablespoons lime juice
  • 1/4 cup heavy cream

Directions: Crust

  1. Preheat oven to 350°F
  2. Grease sides and bottom of a 9 inch spring form pan
  3. Mix all ingredients together and press mixture into the bottom of the pan
  4. Bake crust unfilled for 10 minutes and allow to cool before filling.

Directions: Cheesecake

  1. Using an electric mixer, beat cream cheese until it is soft.
  2. Add sugar and eggs until incorporated.
  3. Add remaining ingredients, mixing until smooth.
  4. Pour batter into the baked crust and bake for 45-55 minutes or until the top turns golden brown and cracks.
  5. Remove cheesecake from oven.
  6. Let it rest at room temperature for 45 minutes before refrigerating.
