An Easy Cake Recipe

Cranberry Almond Bundt Cake
Ingredients
- 3/4 cup DaVinci Gourmet Almond Classic Syrup
- 1/3 cup DaVinci Gourmet Almond Classic Syrup
- 1/2 to 2/3 cups milk, whole or 2%
- 2 1/2 cups cake flour, sifted
- 1/2 lb cream cheese, softened
- 1 1/2 cups powdered sugar
- 2 1/2 teaspoons double acting baking powder
- 1/2 teaspoon salt
- 1/2 pound (2 sticks) plus 4 tablespoons unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs, room temperature
- 4 tablespoons finely grated orange zest (approx. 2 oranges)
- 1 teaspoon vanilla extract
- 1 cup dried cranberries, chopped
Directions
Cake
- Preheat oven to 350°F. Butter a bundt pan and dust with granulated sugar, tapping out excess. In medium bowl, combine sifted cake flour, baking powder, and salt. Set aside. In large bowl, using an electric mixer, beat butter until creamy. Gradually add sugar and beat until mixture is a pale yellow, approximately 5 minutes. Add eggs one at a time, beating well. Add orange zest and vanilla. Stir in dried cranberries. With mixer on low, add the flour mixture in thirds, alternating with syrup. Scrape batter into prepared bundt pan and bake for approximately 50 minutes, or until toothpick inserted in the center of the cake comes out clean. Cool and invert on wire rack.
Glaze
- In medium bowl using electric mixer, beat cream cheese and butter together on high speed for 1-2 minutes. Gradually add sugar and syrup, scraping down sides of bowl as needed. Add enough milk to achieve desired consistency. Pour or spread over cooled cake.
- Tip: Optional garnish: Sprinkle whole or coarse chopped dried cranberries over the top of the cake
